We run board across the framing so every seam lands on solid backing, and we keep butt joints away from window and door corners where a shore house moves the most. Ceilings get hung before walls so the wall board carries the ceiling edge, and on framing spaced 24 inches on center we use 5/8" panels, because 1/2" board on wide spacing is the sag you notice two summers later.

The wall and ceiling between an attached garage and the living space get 5/8" Type X fire-rated board as code requires.
